RECIPES: Mad about mangoes

Mangoes are in season and in abundance. The South African Mango Growers’ Association shares four ways to bake mango inspired cakes:*Vanilla cake with mango curdFor the mango curd1 large fresh mango, cubed½ cup white sugarjuice of 1 lemon3 large eggs6 tbs unsalted butter, cubedFor the cake250g unsalted butter, at room temperature1 tbs vanilla essence1 cup castor sugar4 large eggs3 cups self-raising flour¾ cup milkMethodFor the curd, place the mango in a food processor and process until smooth.
